Sushi Lover is in the midst of final inspections, hiring and training in downtown Appleton.

Co-owner Leslie Sun said the restaurant will be ready to open its doors sometime between March 4 and 11.

Sushi Lover is an all-you-can-eat sushi restaurant at 527 W. College Ave., a space that was most recently Il Angolo. Sun and husband Leo You, a sushi chef, opened their first Sushi Lover in Green Bay in 2017.

“Appleton people were driving up to Green Bay and they asked when we’re opening in Appleton. We looked for locations here for three years,” Sun said. “This location is perfect.”

What makes this all-you-can-eat restaurant different is that it’s not a buffet.

Customers order off a menu, food is then made to order and servers bring dishes to the table. This method reduces food waste, said Sun.

Besides sushi, its menu will have tempura and hibachi entrees, appetizers, fried rice and desserts. A special “Appleton roll” has snow crab, spicy crab and mango sauce. Most popular dishes in Green Bay are shrimp tempura and the Godzilla, pink lady and volcano rolls.

Adults pay $13.99 for weekday lunch or $20.99 for dinner and all-day dining on weekends. Children’s graduated rates are $4.99-$10.99.

The twist here is that if diners don’t eat everything they order, they’re charged for the excess and given a box to take leftovers home.

Servers explain how it works at each table at the start.

Sun and You have been successful with this approach in Green Bay. In Appleton, they have a third partner, Jenny Yu. Over the last four months, they remodeled the Appleton space with dark wood booths, a sushi bar and wallpaper showing Japanese women in traditional kimonos.

Info: Open 11 a.m.-2 p.m. for weekday lunch and 4:30-9:30 p.m. for weeknight dinner. Open noon-10 p.m. Saturday and noon-8:30 p.m. Sunday. Reservations are taken for groups of six or more and an 18% gratuity is added. See the menu at sushiloverwi.com. The future phone number is 920-257-4255.
