JL Fields has been on a mission to build the Colorado Springs’ vegan community since she arrived here in 2012. Her message is catching on. Witness the popularity of her sold-out vegan beer-pairing dinner at Phantom Canyon Brewing Co. in January and her frequent Vegan Pop-Up Markets, which bring vendors selling vegan groceries, food, clothing, accessories, books and more under one roof.
“We launched the Vegan Pop-Up Market concept in 2013 with five vendors,” she said in a statement. “Five years later, we have more than 20 for the upcoming Summer Vegan Pop-Up Market.”
Fields stays busy promoting a 100 percent plant-based lifestyle. She’s the founder and culinary director of the Colorado Springs Vegan Cooking Academy and the author of four vegan lifestyle and cookbooks. She also writes a monthly vegan dining review for The Gazette.
At the June market, she’ll have a booth with information about her academy alongside the other vendors (see the list below). Two food trucks, Potato Potato and Vegan Van, will be parked outside.
