The Buzz: New cafe in Appleton, River Tyme Bistro, is still in the works – Post-Crescent

River Tyme Bistro is under construction inside the historic Atlas building on Appleton’s riverfront, in the space that was previously Atlas Coffee Mill.

Coronavirus work restrictions are in place for construction on the new cafe but haven’t changed its plans.

Crews continue to work on the space at 425 W. Water St.

“We’ll open as soon as we can. Everything is going forward in our minds,” said co-owner Candice Mortara. “They have assured me they are doing what they can in keeping with the state guidelines and seriousness of the situation.”

“We’re hoping to open this spring,” said co-owner Christine Williams. “We don’t know exactly when.”

Construction is at a mid-point right now, moving past demolition work to reconstruction.

“The ceiling has been painted, which seems like a watershed moment to me. It’s putting things back together again instead of taking them apart. We have the rough-in done for plumbing, electrical, HVAC. The walls are put back together and dry walled,” Mortara said.

“Our lights are from the Thilmany paper mill. The bricks are original Kimberly-Clark Cream City bricks that they tore down on-site. (Building owner) Randy Stadtmueller stored them in the basement and allowed us to use them,” she said. 

Cream City bricks are classic pale yellow 19th-century bricks from Milwaukee.

The bistro has a number of reservations for Mother’s Day already, including a brunch/boat package paired with their Fox River Tours riverboat operation.

If they can’t make that date, they’ll give refunds or offer alternative dates.

“We might do Mother’s Day in July or August,” Mortara said.

“We are taking reservations for events going forward. If you’re planning an event, you can make a reservation. If something happens, everything is fully refundable.”

Seven employees on the payroll are currently helping with home-based projects, including writing procedures and operation manuals.
