The Buzz: Changes underway in former C.U. Saloon space – Appleton Post Crescent

Work has started on the transformation of the former C.U. Saloon space in downtown Appleton. The building at 409 W. College Ave., across from the Fox Cities Performing Arts Center, has been empty since the country music bar closed in June 2018.

Now Luis and Jennifer Morales, owners of the local Mr. Taco chain, are putting a new bar, and potentially a restaurant, in the building.

They currently own Mr. Taco restaurants in Kimberly and Hilbert, a small Mr. Taco taqueria on State Street in Appleton, two Mr. Taco food trucks and Savor Food & Spirits in Kimberly.

The new downtown spot will evolve, starting with cosmetic changes in the front portion. 

“Our project is in the works. We haven’t decided if it will be a bar or a Mr. Taco,” said Luis.

“For right now, we’re thinking of opening it as a bar,” said Jennifer. 

“The endpoint is to have food there. Until we get the actual kitchen up and running, we plan on having our food truck in front,” she said. “We’re figuring out if we’re going to have a sit-down restaurant or late-night snacks for the bar crowd.”

They’ll ask the Common Council to approve a transfer of their State Street liquor license to College Avenue.

“We’ll focus on a lot of margaritas. A large selection. Plus mojitos. It will be fun,” said Luis.

“Our goal is to open by Cinco de Mayo,” he said.
