The Buzz: Kimberly’s closed Hong Kong Buffet to reopen as Pho Papa – Appleton Post Crescent

The vacant Hong Kong Buffet in Kimberly has a new owner and will reopen as a new restaurant.

Pho Papa is a family-owned Vietnamese restaurant expected to open in March. It is not a buffet.

New owner Evan Tran is waiting for his brother Denny to arrive before opening the doors. 

“My brother is the main chef and I’m waiting for him to move here,” he said.

They’ll be joined in the restaurant by other family members including Evan’s wife.

Another brother, Jason, bought the building as an investment. State records show he purchased it in November for $240,000.

Tran family members are moving to the Fox Cities from Oregon.

“We like this area,” Evan said. “Our food is good for cold weather.”

Hong Kong Buffet closed in this spot in May, a few weeks after the neighboring Shopko store closed. The Hong Kong Buffet in Neenah continues to operate.
