Rico’s Family Restaurant will open its first Appleton location in the former Paninoteca/Sunrise Family Restaurant building at 2025 N. Richmond St.
It could be ready to serve as early as Oct. 1.
“That’s my goal, but I’m not sure exactly when I’ll open. The inspectors are coming next week,” said owner Efrain “Rico” Carrasco. “When I’m ready to open, I’ll post on Facebook.”
He leased the building with an option to buy. It became available when Paninoteca abruptly closed Aug. 11.
It will be Rico’s fourth Fox Cities location, following Freedom (opened in 2006), Combined Locks (2015) and Kaukauna (2018).

Appleton had been on his wish list ever since he worked in an Appleton restaurant 20 years ago. He said this location “is a good opportunity.”
Rico’s Family Restaurant is a casual, value-priced eatery with a large American diner menu that includes all-day breakfast, burgers, sandwiches, ribs, chicken and Friday fish fry. It’s open every day for breakfast, lunch and dinner.
“We’re known for breakfast,” he said.
