Brewery brings buzz to Bankers Hill – pacificsandiego.com

News of the looming opening of Pure Project in Bankers Hill has the craft beer community buzzing with excitement. Adored and respected for its high quality brews, ethical practices and killer branding, the new locale will bring the Pure aesthetic from Miramar to a new demographic of the city. Launching a grand opening weekend August 2-4, Pure Project will unleash special cellar and barrel aged beer and present a fresh side of the company’s brand and brewing.

Ahead of the doors swinging open in Bankers Hill, which go by the nickname Pure at the Park, PACIFIC sat down with co-owner Mat Robar and Lily Howard from Pure Project’s marketing team to get the inside scoop on the brewery’s latest venture.

PACIFIC: For those who don’t know Pure Project, what’s your vibe?

MAT ROBAR: We always say quality ingredients and attention to detail matters from grain to glass. It’s about being unpretentious and approachable, (a place) where you can come and be educated. It’s not a beer snob kind of place, and don’t ever be afraid to ask questions. We brew with the seasons and with a lot of local organic agriculture.

You’ve drawn quite the following over the past few years out of your Miramar location. What’s different about this new space in Bankers Hill?

ROBAR: The reason we wanted this new location is it’s a different demographic than Miramar. We feel we can expose our brand and get to know a lot of new people that may not drive to Miramar. The new location has a totally different feel, and the word we use to describe this new space is “transition.” From hard industrial to warmer, softer materials, you will find that feel throughout. Miramar can get pretty crowded, but here it’s a little larger with an outdoor space, so people can spread out. It’s a high-end building, so we are blending Pure’s original style with that high-end feel.

Any surprises for the grand opening?

ROBAR: We are definitely going to be pulling things out of the cellars to put on tap for sure.

Will the beers be the same for this location?

ROBAR: We will have more tap handles, which will mean we will always have four more beers on tap. Bankers Hill will see more cellar and barrel aged beer, and a slightly different tap list.

You are using reclaimed Torrey pine in your new space, how did that happen?

ROBAR: It’s illegal to cut down a live Torrey Pine (it’s an endangered species). This was from a fell Torrey and we were able to get some of the slabs. We are excited because it is such a piece of iconic San Diego and to be able to give it a new life.

LILY HOWARD: The Torrey Pine was on private property on the south side of Del Mar adjacent to the Torrey Pines State Natural Reserve extension and was felled in July 2017 due to “beetle kill.” It was milled on site and then transported to a facility to dry. Once the 20-foot slabs were selected, they were kiln-dried, surfaced and fabricated into what you now see as the bar top and epoxy river table.

Will there be food at Bankers Hill?

ROBAR: We will have a variety of prepacked snacks, and we are looking for ways to work with local restaurants to give people plenty of options.

What’s your message to both new Pure Project and loyal Miramar fans?

ROBAR: I think this is going to be a different and unique experience from Miramar. I would invite people to come out and see Pure Project in a different wrapper.

Side note: For North County beer fans, look for new of a potential Carlsbad location. Pure Project will meet with the city council in August, and hope to begin building in August or September, pending city council approval.

Pure at the Park will be open 3-9 p.m. Monday, noon to 9 p.m. Tuesday through Wednesday, noon to 10 p.m. Thursday-Saturday and noon to 8 p.m. Sunday.
